VARIETY: Navy Beans/Michigan Beans
ORIGIN: Spain
Navy beans are small, pea-sized beans that are creamy white in color. They possess a refined texture and delicate flavour. Navy beans are a good source of cholesterol-lowering fiber, as are most other beans. In addition to lowering cholesterol, navy beans’ high fiber content prevents blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia.
These beans are used for the famous Boston and English baked beans because their skin and fine texture do not break up on cooking. These beans were named for their part of the U.S. Navy diet during the second half of the 19th Century.
